- A Chill Goes Through Her Veins
- Knockdown
- Final Nail
- Knockout
I know they center mostly around the case of Beckett's mom but for me those are the best episodes, I love the more serious ones, and after them I think you want to know how they got from the pilot to the "I love you" at the end of season 3.

OfflineIMO, the must-see ones for someone who's starting to watch the show are:
- "Flowers For Your Grave" ("You have no idea." – that pretty much sums it up [Image Can Not Be Found]);
- "A Chill Goes Through Her Veins";
- "Suckerpunch";
- "Tick Tick Tick" and "Boom" or "Setup" and "Countdown" (I tend to recommend two parters mostly because they are full of action scenes intertwined with some emotional moments between C/B);
"Fool Me Once" was the first episode that I got to watch and it got me thinking that I should clearly look into the whole TV show from the beginning. Now that I think about it, I realise that it wasn't exactly the murder story that got me into the Castle Universe, but the characters and the lightheartedness of the whole show. The characters are so wonderfully written that any episode is a good episode to start watching, as long as you pay attention to them (but, of course, it's always better to start from the beginning). I like the lighthearted episodes ("The Mistress Always Spanks Twice" and "Nikki Heat" always manage to get me smiling), but the episodes with more action and / or more serious content are the ones that I like the most ("Suckerpunch", "Knockdown" and "Knockout").
I had a different list in my mind when I started this post, but I realised that including some of the first episodes was a better idea than to start with "Knockdown" or "Knockout" (not because of the story but, as a friend of mine pointed out, it would be a list with some spoilers regarding JB's murder and the developments in C/B's relationship that we got from those episodes).

Sucker Punch
Flowers For Your Grave—pilot, always a sure keeper, just absolutely got hooked with that episode.
Setup/Countdown — pretty much a two in one thing, absolutely love two-parters. 
and/or maybe — Knockout [Although for someone who hasn't been watching Castle since
season one, the excitement and thrill probably wouldn't be the same,
example--for Montgomery being the third cop, the reaction wouldn't be as
deep as with someone who's been watching since season 1
].
Oh crap that's 7 episodes. Haha sorry.

OfflineMy favorites are Tick Tick Tick and Boom. Whenever I'm trying to get a friend or family member into the show, I always make them watch those two (and of course the pilot, if they're willing to watch that many episodes). I think those two episodes illustrate what the show as a whole does so well. There are a lot of serious episodes, and there are a lot of light hearted episodes with witty dialogue, but these two episodes really bring the two together so well. Plus it has a lot of my favorite moments and lines in it. Also this is my favorite stage of Beckett's character evolution, and we get to see how she reacts to personal threats and being kicked off the case and everything.

2x17 & 2x18 – Tick, Tick, Tick and Boom! – Castle "in review"

3x02 – He's Dead, She's Dead – Trying to show Beckett "magic"
3x11 – Nikki Heat – 'spoof' of Beckett
3x12 – Poof, You're Dead – seeing that KB and RC are not that different
or
3x15 – The Final Nail – seeing KB & RC at odds with each other and KB's statement that she trusts RC.
These are not necessarily "the best of Castle", but they show the characters and the humor and humanity of all of the characters.
To get to the final 5 that should hook most people…
1x01 FLOWERS, 1x06 HOME, 2x02 DOUBLE, 3x11 NIKKI HEAT and 3x15 NAIL
That leaves a lot of discovery for new Castle converts.
